Many thanks to Armand Prieditis of Davis, California for the wonderful Lush Lime Quinoa recipe.

As the title indicates, quinoa is the main ingredient in this flavorful recipe. Quinoa is an ancient superfood, considered the 'Mother Grain' of the Incas. It has the highest protein content of any grain. The lime adds a great tang to the dish and the brazil nuts add a wonderful texture.
