Dr. Colin Campbell, Ph. D

If you change your diet you can dramatically reduce the risk of cancer, diabetes, heart disease and obesity. This is the central message of Dr. T. Colin Campbell, one of the keynote speakers at the upcoming Portland VegFest. A Jacob Gould Schurman Professor Emeritus of nutritional biochemistry at Cornell University, Dr. Campbell has received more than 70 grant-years of peer-reviewed research funding and authored more than 300 research papers.

His recent book, The China Study: The Most Comprehensive Study of Nutrition Ever Conducted and the Startling Implications for Diet, Weight Loss and Long-term Health, is the culmination of a 20-year partnership of Cornell University, Oxford University and the Chinese Academy of Preventive Medicine.

In The China Study, Dr. Campbell details the connection between nutrition and heart disease, diabetes, and cancer, and also its ability to reduce or reverse the risk or effects of these deadly illnesses. The China Study also examines the source of nutritional confusion produced by powerful lobbies, government entities, and irresponsible scientists.

The findings? “People who ate the most animal-based foods got the most chronic disease … People who ate the most plant-based foods were the healthiest and tended to avoid chronic disease. These results could not be ignored,” said Dr. Campbell. “I propose to do nothing less than redefine what we think of as good nutrition. You need to know the truth about food, and why eating the right way can save your life.”

Mahalo to Lily Julow of Gainesville, Florida for her incredible Cape Malay Madras Curry recipe.

Lily's recipe is included in 7 MINUTE CHEF Volume 1. She received a free copy of the e-book and the recipe will be entered into the Grand Prize drawing for the free trip to Kaua'i. Lily also qualifies to win one of the 50 runner up prizes.

Cape Malay Madras Curry

Please read below in Lily's own words as she tells of her culinary journey that led her to our recipe contest.

"Cooking is a passion, I suppose, because my mother was so very talented at it, an artist really.  I guess it's in our  genes because my daughter has turned out to be just as passionate about it.

I became a vegetarian about 16 years ago after reading an investigative report in Mother Jones magazine that followed a McD burger back through every stage, including the "processing plant" and finally, the animal.

If that wasn't enough, I read Ruth Oseki's prize-winning book, My Year of Meats.  Need I say more? I confess I'm not scrupulous about being a vegan;  I love cheese and butter too much for that.  But meat, poultry and fish are still a no-no.

As for my bio, I'm a retired newspaper features and lifestyle writer, puff really, not Pulitzer material. I was staff on many Southeastern dailies.  My children are grown and in the throes of child-rearing as I sit back, at last, and read, travel, and just have a heck of a good time."
