the 2nd Annual Healthy Gourmet Fest in Aspen, Colorado, July
27-28, 2006. Mark joined five other chefs from across
the country being recognized by ACIH for embracing seasonal,
sustainable, organic foods and demonstrating that healthy eating
can a creative, innovative and delicious experience.
The two-day Healthy Gourmet Fest in Aspen, Colorado, featured cooking classes by the award-winning chefs in luxurious Aspen homes, an organic wine tasting seminar, and the Platinum Carrot Awards and Tasting Dinner featuring signature dishes by the chef honorees.

Growing up on a farm in Oregon, Robert Cheeke had two options. Eat the meat that was raised on his farm, or keep the animals as pets and choose a vegetarian diet. He chose the latter.
It wasn’t until he was 15 years old that he made the decision to go veg. For him, it was initially a pure ethical and animal rights decision to go vegetarian, and wasn’t until later on that he realized the health benefits of a vegetarian diet.
