Filling
2 large Persimmon, ripe (1 ½ C)
1 C Almonds, soaked & peeled
½ C Dates, pitted
1 Tbl Almond butter, raw
Pinch Cinnamon powder
Pinch Cardamom powder
Pinch Nutmeg, ground
• Coconut water to desired consistency
Topping
¼ C Walnuts or pecans
3 small Dates, pitted
1 tsp Coconut, shredded
Pinch Nutmeg, ground
Loving Preparation
1. Place filling ingredients in blender or food processor and process until smooth. Pour into 2 parfait glasses. Please note, the strength of the blender will determine how much liquid is required to reach a smooth consistency. As usual, we recommend a VitaMixer.
2. Place nuts in food processor and pulse chop. Add dates and coconut and pulse process until chopped well. Sprinkle on top of filling and enjoy. Dust with a pinch of nutmeg.
Variations
Replace persimmon with other fruit such as banana, berries, papaya, mango, cherimoya,
atemoya or sapote. Replace almonds with other soaked nuts or seeds. Create a multilayered parfait by making three batches using a different colored fruit in each batch.
