Live Coconut Cream Pie

Yield: 1 9-inch pie
Prep Time: 20 minutes
Chill time: 1 hour

Ingredients

Crust
2 cups macadamia nuts or other nut such as almonds, pistachios, pecans, or your favorite
2 cups dates, preferably medjool

Filling
3 cups fresh, medium soft coconut meat
1 cup coconut oil
¾ cup agave nectar
1 tsp coconut flavor, optional

 

Loving preparation

1. Process the nuts and dates in a food processor until fine and crumbly and the mixture sticks together when squeezed in your hand.

2. Press the crust mixture into the bottom and sides of a glass 9-inch pie pan.

3. Place all the filling ingredients in a high-powered blender and blend until smooth, about 1 minute. Pour the contents into the pie shell.

4. Refrigerate for at least one hour before serving.
